Classic Sourdough Ciabatta

This ciabatta is the epitome of simplicity and perfection. Made without yeast, on live wheat sourdough, it turns out surprisingly light, with a characteristic large porosity and a thin crispy crust.
Only four ingredients - flour, water, salt and olive oil. No additives, leavening agents or accelerators. The taste is deep and pure, and the crumb is stretchy, aromatic, like a real Italian ciabatta.

Ciabatta is perfect with olive oil and balsamic vinegar, cheese, soups and pasta. And also as a base for bruschetta and sandwiches.
